Add onions and garlic and cook until they are caramelized and fragrant
Add Garam Masala, Turmeric, Chili powder, Cumin powder, Salt pepper and Ground coriander directly on top of garlic and onions and stir around for a few seconds ( it should become like a paste and will smell amazing)
Quickly add Vegetable Stock and Stir
Next add coconut milk and cooked chickpeas
Bring to a boil then reduce heat to simmer for 10 mins until sauce has thickened
Taste and adjust seasoning if necessary
Serve over basmati rice and garnish with cilantro
